It was in 1204 that the Count of Provence, Alphonse II, gifted the estate to the Knights Templar. Imagine, at that time, a flourishing commandery where the warrior-monks structured their days around prayer, military training, and cultivating the 1,000 hectares of fertile land… In 1256, a parchment preserved in Marseille already mentions the wine produced here…”
We also learn that this vine, nestled between 220 and 350 meters above sea level, benefits from an ideal temperature range Scorching summers, cold winters, and natural protection offered by 850 hectares of Mediterranean vegetation. Holm and white oaks, olive trees and garrigue form a dense setting here, conducive to organic farming.

GOURMET LUNCH AT LOU'S BISTRO
Settled on the shaded terrace of Bistrot de Lou, surrounded by stone buildings and protected by two majestic mulberry trees that stand in the square, we savor the moment.
Just a short walk away, the estate's remarkable garden adds a touch of serenity. The air is soft, fragrant with the scents of barbecues and wood fires, while the authentic and welcoming atmosphere invites relaxation.
The meal offers a generous choice : a large salad combining freshness and colors, with crisp young shoots, carefully prepared mixed vegetables, and a touch of aromatic herbs to enhance the whole.
Or, tasty grilled meat or fish, perfectly seared over a wood fire, accompanied by delicately cooked seasonal vegetables.
Each option reflects the authenticity and generosity of Bistrot de Lou, showcasing simple and tasty products.
To accompany this pleasant moment, a glass of Château Peyrassol rosé, in very pale lychee pink hues, is served to us. Slim and elegant, Its complex nose reveals delicate aromas of white-fleshed fruit, citrus, and white flowers. On the palate, it is both silky and lively, with a subtle freshness in the finish, supported by a hint of salinity that harmoniously balances the whole.

Gavoty: Provençal authenticity since 1806
Not far from there, in Cabasse, the Domaine Gavoty embodies the legacy of 7 generations. Since 1806, this family vineyard has been passionately developing its craft to produce organic Provence wines. Located on the Via Aurelia, the estate has been steeped in history, with Roman remains still visible today.

THE SAINT-ROUX CASTLE FARM
The subtle scent of grapes and freshly cut grass welcomes us to Château Saint-Roux. In this bucolic setting, a feeling of tranquility immediately washes over us. This afternoon, we visit the estate's farm, where numerous goats await us. Their peaceful presence adds an authentic touch to the experience, and their curious gaze invites us to take a moment to observe them and appreciate the rural life of the estate.
Smiling, our guide recounts how the Château has evolved through the generations. Each building holds a piece of history: a restored barn, a carefully preserved old wine press, and ancient stones that whisper tales of bygone days. Then comes the encounter with the animals…
